Pros

You learn great organizational skills in the context of being a waiter. You can learn about wine and food. They feed you, but they take it out of your pay. Its fun when its not crazily stressful, and your part of a great New Orleans tradition.

Cons

Takes over you life, which is alright except it means that the only context you can hang out with people is while drinking after work which sounds fun, but gets old. Once it replaces other parts of your life it can be very difficult to leave. You also have to deal with people who are as at the bottom of the food chain as you are, which is alright since you learn patience. The stress is kind of a part of the experience, but I've seen grown people break down and cry from the hours and the pressure and the gossip in the dish room.

Pros

At this restaurant, there is typically no shortage of work. You will not have to fight for a shift. Moreover, administration provides you with plenty of opportunities to learn and advance into higher-paying positions. For instance, you can attend cocktail, flambé, and hospitality classes to show your commitment and interest in being promoted.

Cons

This place runs like a factory. While management will attempt to make you feel as though you are family, you are in reality just a cog in a rusty old machine. Management and owners desperately need to reevaluate what steps of service they are prioritizing and what they are not. In my opinion, the most difficult aspect of this restaurant were the coworkers. Most of the employees there are extraordinarily unhappy, and will take it out on you. Management preaches teamwork, but acts like they are too good to do the unfavorable work like running trays or bussing tables. Moreover, higher ups take family meal and sodas out of your already small hourly pay. HR complaints will not be taken seriously, especially if they are "against" someone with seniority. This place is a great temporary gig, but be cautious not to get stuck there.
