I was Project Director for an Earth Island for almost 9 years. They were a fantastic and essential partner.

Pros

If you want to work for a 501c3 where sponsored organizations aren't required to have a board of directors to provide oversight, fiscal responsibility or worker protection, then this is a good place to work.

Cons

Fiscally sponsored organizations operating under EII's 501c3 can function without the important checks and balances typical of a 501c3 organization with its own board of directors. Workers are not protected. EII sponsors many great orgs, but not all are good. Look into the turnover rate of a fiscally sponsored org before you consider a job. If an employer doesn't encourage you to speak directly with current or former employees, consider what that might indicate.
