They don't hire servers right off of the bat unless you are applying at a store that's newly opening. You are hired as a food runner or below and have to work your way up to a server, which can take at least 3 months. This is to give the current staff a chance of upward mobility and forces you to learn the menu, food knowledge, and SOPs before you can reach one of the most coveted positions in the restaurant. They are receptive to people who are humble and value teamwork. You have to be willing to learn things the Din Tai Fung way because this restaurant operates very differently from any other you've worked at before. You may have been the best server at your last job, but that means nothing here. Be ready to learn hard and learn fast.

Fairly easy - you sign in and meet with the manager. She was very nice. The sections are small but the training is too long in my opinion. I believe she said 15 shifts before you hit the floor. This was where I tapped out. I have so much experience this was where I felt they get you working multiple non serving shifts without tips for quite some time. No thank you.
You will be greeted by one of the workers. The managers will ask you simple questions and just answer them truthfully, and everything should go smoothly. The process would not take longer than 15 minutes. Sometimes I would see others get hired on the spot.
